Full of life, energy and flavour, the bottles will evolve and continue to surprise you even after they've been opened for days and weeks. The brewery propagates its own koji spores, an extremely rare decision and works within low interventionist principles. Katori 80 is brewed with organic, pesticide free rice barely polished to 80% and using the traditional Kimoto
