With over 460 years of brewing history, Konishi Shuzo is one of Japans oldest sake producers. Drawing from centuries old brewing records, the brewery has revived an authentic 1703 recipe from the Genroku Era, a golden age of the Edo Period when art, architecture and culture flourished. During this time, sake was made very differently from today.
